Swiss Muesli




I have fond childhood memories of my mum making this breakfast for my sister and I. There is nothing quite like the combination of raw fruit, mixed with cream, yoghurt and honey, topped with lightly toasted nuts and seeds!



This muesli packs a punch when it comes to essential nutrients, with a good balance of carbs, fat and protein. This is a fantastic pre-workout breakfast, providing you with all the energy you need to go that extra mile.



Serves 1

Ingredients:
1/2 large un-peeled apple (grated)
1/3 cup quick cook oats
1/3 cup cream
1/2 cup yoghurt
1 tsp raw honey (I use Rewa Rewa, a NZ native honey)
squeeze of lemon or lime juice
1/4 cup walnuts
1/4 cup sunflower seeds
1 tsp chia seeds
1 tsp LSA

Method:
On a medium heat lightly toast the walnuts and sunflower seeds in a frying pan. Once they are nicely toasted, set aside and allow to cool. Mix the cream, yoghurt, lemon juice, chia seeds and honey together until the honey is thoroughly mixed in. Fold in the the grated apple and oats. Top with the nuts, seeds and LSA. Enjoy!

Variations: You can add dried fruit such as sultanas or raisins, or use a nice firm pear in place of the apple. You can also use a combination of any nuts or seeds.
