Cauliflower Rice with Turmeric

For those of you who aren't familiar with cauliflower rice - it's a tasty and healthy substitute for rice, so easy to make and can be used in place of rice in any dish. This cauliflower rice has the addition of turmeric which adds a wonderful golden colour, it goes especially well curries and dahls!


                                             The turmeric makes it look just like rice!


             This is an excellent way of getting extra vegetables into fussy children! They wont even know...


              Simply blend the cauliflower florets in a food processor or grate, using a grater until relatively fine.




Serves 4

Ingredients:
1 medium cauliflower, washed with leaves and central core removed
a good pinch of salt
2 tsp turmeric
1 tbsp coconut oil

Method:
Place the cauliflower florets into a food processor and blend until relatively fine (alternatively grate the florets using a grater). Melt the coconut oil in a frying pan over a medium heat, add the ground cauliflower salt and turmeric, lightly fry for five minutes, stirring constantly. Serve with your favourite curry or dahl!
