I've made this beautiful spread using hand-made biodynamic quark and fresh herbs from my garden, served with home made sesame spelt crackers - a delicious afternoon tea!
Quark is a form of Central European soft cheese which is especially popular in Germany, it is deliciously creamy with a similar texture to ricotta. It is a very versatile cheese lending itself to both sweet and savoury dishes.

3 garlic cloves, crushed
handful fresh parsley, washed and finely chopped
2 sprigs fresh rosemary, washed and finely chopped
2 tbsp olive oil
freshly ground black pepper
Place all of the ingredients into a bowl and mix thoroughly, season to your liking. Serve with spelt and sesame crackers - recipe coming soon.
