Raw Apricot Cashew Energy Bars

These chewy, nutty, fruit-filled energy bars are fantastic for when you need a quick sustaining snack. Making your own energy bars ensures that they are free of refined ingredients, preservatives and any other nasties that you may find in store bought bars!

These take five minutes to make in the food processor, and if you don't eat them all at once they keep well in the fridge!

Makes around 14 bars

1 1/2 cups cashew nut pieces
1/2 cup sunflower seeds
15 medium dried apricots
5 medjool dates, pitted
1 cup desiccated coconut
good pinch salt
1 - 2 tbsp water
1 tbsp coconut oil melted
extra desiccated coconut

Line a medium slice tin with baking paper and set aside. Place the cashew nuts and sunflower seeds into food processor and pulse until roughly ground. Add all of the remaining ingredients and pulse until the mixture forms a dough. Be carful not to add too much water, add 1 tbsp and add more if needed. In the case that the dough is too sticky, add a bit more coconut to help dry it out. Press the dough into lined slice tin and sprinkle with the extra coconut. Refrigerate for a couple of hours before cutting into squares. Store in fridge in an airtight container.
