Blueberry Breakfast Smoothie

I love having oats for breakfast, and lately I have been making this delicious and satisfying smoothie to get me going in the morning. I soak the oats and almonds overnight, as this increases the enzyme activity and allows for greater absorption of the nutrients by the body, and also increases digestibility.

Serves 1

1/2 cup rolled oats*
8 almonds
fresh filtered water
1 cup rice milk (or milk of your choice)
1 frozen banana
bunch fresh kale, washed and stems removed
small handful fresh or frozen blueberries
1 tsp chia seeds (optional)
1 tsp honey (agave nectar for vegan option)

Place the oats and almonds into a bowl and just cover with fresh filtered water. Cover and leave to soak overnight, or at least a couple of hours in the refrigerator. The next day place the oat and almond mixture into a blender along with all of the remaining ingredients. Blend until smooth, serve at once!

*Use any oats you have, the less processed the better, so steel cut oats or oat groats would be the best option.

  2. Thanks Aimee, It is delicious! I remember that you can't eat raw banana, so you could add another fruit of even avocado to replace it:)
