Make these in wintertime when apples are plentiful, I would recommend using granny smith apples or other cooking apples for best results.

6 cooking apples such as granny smith or braeburn, washed
1 tbsp coconut oil
3 tbsp sultanas
6 medjool dates, pitted and chopped
zest and juice of 1 orange
1 tsp mixed spice
1/2 tsp vanilla essence (the real stuff)
4 tbsp walnuts
Pre-heat oven to 180°C. Use an apple corer or a sharp knife to remove the core of the apple. Be sure to leave quite a large hole in the centre to fit lots of lovely filling in, but don’t get so carried away that you split the apple. Also to prevent the apple from splitting while baking, make a shallow cut all the way around the centre of the apple. Place the prepared apples and the orange juice into a shallow baking dish and set aside. Place all of the remaining ingredients into a small saucepan over a low heat, stir until the oil has melted and all of the ingredients are mixed together (see above picture). Take off heat and spoon the mixture into the prepared apples. Bake for around 40 minutes or until apples are tender, basting occasionally with juice from the baking dish. Serve warm with coconut yoghurt or maple whipped coconut cream..
