Tangy Avocado and Tomato Salsa

This simple salsa is my favourite accompaniment to salmon and chicken. Now that it's getting closer to summer there will be an abundance of beautiful fresh tomatoes and peppers to make use of!

 Avocados have the highest fibre content of any fruit - and 75% of its calories are from monounsaturated fat, but it is also said to reduce cholesterol; in Brazil and Vietnam, they make avocado milkshakes and ice cream!

                          This is the taste of summer to me, I just love the refreshing flavours of this salsa..

Serves 4

1 ripe but firm avocado, de-stoned and diced
1 red peper, washed, seeds removed and diced
2 medium tomatoes, washed and diced
1 medium red onion, peeled and diced
handful fresh coriander (cilantro), washed and roughly chopped
a few drops of tabasco sauce (optional)
2 tbsp fresh lemon juice
freshly ground black pepper
garlic salt

Place all of the ingredients into a medium bowl and gently toss, coating all of the ingredients in the lemon juice and seasoning. Serve as a side with fish or chicken or alternatively serve with corn or pita chips. Enjoy!
