This is based on a family recipe which uses a couple of ingredients you don't usually find in other guacamole recipes, tomato sauce, yoghurt and mayonnaise add a depth in flavour and a creaminess which keeps you coming back for more!
The trick to making the perfect guacamole is using good, ripe avocados. Check for ripeness by gently pressing the outside of the avocado. If there is no give, the avocado is not ripe yet and will not taste good. If there is a little give, the avocado is ripe. If there is a lot of give, the avocado may be past it's best.
3 Avocados, halved and de-stoned
3 cloves of garlic, skin removed and crushed
1 small red onion, skin removed and chopped finely
2 tsp of Coconut and Olive oil Mayonnaise or other good quality mayonnaise (leave out for vegan option)
1 tbsp plain yoghurt (leave out for vegan or dairy free option)
small handful coriander, washed and chopped roughly
2 tsp good quality tomato sauce or paste
1 tbsp fresh lime or lemon juice
1/2 tsp garlic salt
freshly ground pepper to taste
Use a spoon to scoop out the flesh of the avocado and place into a medium bowl. Mash until fairly smooth, add all remaining ingredients and gently fold together. Serve with Sesame Spelt Crackers or carrot sticks for a filling snack.
Variations: I love to add chopped tomatoes when they are in season!
