Simple Salmon with Asparagus & Chargrilled Vegetable Salad

Here is a very simple yet healthy and delicious meal. Salmon is a highly nutritious protein as it is rich in essential fatty acids, anti-oxidants, vitamins and minerals – all of which are vital ingredients for a healthy balanced diet. Served with my Chargrilled Vegetable Salad and lightly steamed asparagus makes an excellent mid week meal.

Simply season the desired amount of salmon fillets (depending on servings required) with garlic salt and freshly ground black pepper, heat 1 tablespoon of olive oil in a pan and fry the salmon skin side down over a medium heat for five minutes. Turn over and cook for a further three minutes. Lightly steam the desired amount of asparagus or other greens. Serve along with my Chargrilled Vegetable Salad and a wedge of lemon on the side. Enjoy!
