Watermelon & Coconut Smoothie

With summer comes summer fruit and I have a soft spot for watermelon! So I just whipped up this refreshing watermelon and coconut smoothie for an afternoon snack. It went down so well, I thought I must share it with you!


Serves 2

Ingredients:
1 cup watermelon roughly chopped, skin removed
1/4 pawpaw, skin and seeds removed
1 frozen banana
1/2 cup coconut cream
1 cup rice milk or coconut water
1 small handful soaked almonds or 1 Tbsp LSA
1 tsp honey

Place all ingredients into blender and blend until smooth. Serve at once!
