The whole orange is used in this recipe, skin and all, making them very zesty and full of orange flavor!
Makes 12 muffins
2 medium oranges, washed and cut into quarters
3 large free-range or organic eggs
5 tbsp honey
5 tbsp coconut oil, melted
1 1/2 tsp vanilla essence (the real stuff)
1 1/2 cups wholemeal spelt flour
1 1/2 cups white spelt flour
1 tsp baking soda
2 tsp baking powder
1 cup dates, roughly chopped (remember to remove stones)
Preheat oven to 180°C. Place the first five ingredients into a food processor, mix until thoroughly combined, and all of the orange is blended smooth. Sift in the next five ingredients and pulse until just combined, being careful not to over-mix. Lastly add the chopped dates and pulse until just mixed. Spoon mixture into lined muffin tins, bake in the middle of the preheated oven for 20-30 minutes or until they are golden brown and a skewer comes out clean. Delicious served with butter or yoghurt.
