Date & Orange Spelt Muffins

These date and orange spelt muffins are a favorite of mine! I love how the dates add a lovely caramel chewiness making them super moist and delicious. I have used Spelt flour, as the greater solubility of spelt protein makes it easier to digest than wheat. Honey and coconut oil are used in place of refined sugar and butter, making them refined sugar and dairy free too..

                 The whole orange is used in this recipe, skin and all, making them very zesty and full of orange flavor!

Makes 12 muffins

2 medium oranges, washed and cut into quarters
3 large free-range or organic eggs
5 tbsp honey
5 tbsp coconut oil, melted
1 1/2 tsp vanilla essence (the real stuff)
1 1/2 cups wholemeal spelt flour
1 1/2 cups white spelt flour
1 tsp baking soda
2 tsp baking powder
pinch salt
1 cup dates, roughly chopped (remember to remove stones)

Preheat oven to 180°C. Place the first five ingredients into a food processor, mix until thoroughly combined, and all of the orange is blended smooth. Sift in the next five ingredients and pulse until just combined, being careful not to over-mix. Lastly add the chopped dates and pulse until just mixed. Spoon mixture into lined muffin tins, bake in the middle of the preheated oven for 20-30 minutes or until they are golden brown and a skewer comes out clean. Delicious served with butter or yoghurt.
