How To Make Your Own Almond Butter

Almond butter can be seriously expensive, and I have found "raw" almond butter impossible to find here in New Zealand! So I decided to make my own raw almond butter, and I am delighted to tell you, it is super easy! All you need is a food processor, almonds, and tons of patients...


Raw almond butter makes a versatile and healthy snack, I like to eat mine with carrot sticks or wedges of crisp apple.




It can seem like an arduous task in the beginning, but once you start to see your almond butter coming together it is all worth it!









Makes 1 cup

Ingredients:
2 cups of organic raw almonds (feel free to use more almonds depending on the size of you food processor)

Method:
Place the raw almonds into the food processor and blend on high speed until the almonds are ground to a fine meal (this took me around 10 minutes using my Kenwood food processor). Check that your food processor is not overheating and continue to blend until the ground almonds start to stick to the sides of the processor, be sure to stop and scrape down the sides every few minutes, just to keep everything blending evenly. This process of stopping and scraping can go on for a long time, it took me 45 minutes from start to finish! Have patients and keep processing and scraping, you will begin to see the ground almonds turning smooth and creamy, just like almond butter! Once you have reached the desired consistency spoon into a jar and seal tightly, store in the fridge.
