Buckwheat has a variety of healthful properties. It’s an excellent plant source of easily digestive protein and contains all eight essential amino acids, so it’s close to being a "complete" protein.
Makes 5 -6 waffles, Serves 2
Ingredients: (use organic and free-range where possible)
2 large ripe bananas, peeled + 2 extra for frying
3 large eggs
large pinch of unrefined sea salt
1 Tbsp coconut oil (melted) + extra for greasing and frying
1 tsp vanilla essence (the real stuff)
1/2 cup buckwheat flour
1 tsp aluminium free backing powder
Pre heat waffle iron to a medium heat.
Place the first two bananas into a food processor and process until smooth. Add the next four ingredients and blend until well combined. Add remaining ingredients and pulse until just mixed in.
Grease pre heated waffle iron with the extra coconut oil, place large spoonfuls of the waffle mixture into the waffle iron and close until nicely browned. Continue this process until all waffle batter is cooked.
While waffles are cooking, bring a medium frying pan to a moderate heat, add 1 Tbsp coconut oil and place the extra bananas (sliced lengthways down the middle) into the pan and cook until caramelised on both sides.
Serve the waffles topped with the caramelised bananas, maple syrup, and some freshly whipped coconut cream or yoghurt. Enjoy :)
