Simple Chicken Salad

This is my take on chicken salad, it's loaded with colourful fresh organic vegetables, avocado, sprouts, seeds, free-range chicken, and finished with a light and refreshing orange and olive oil dressing. This simple salad can be made ahead of time for a quick dinner or lunch on the go.





Ingredients: (use organic and free-range where possible)
leftover cooked free-range chicken
2 large handfuls of baby greens such as spinach and kale, washed
1 carrot, grated or peeled into strips
1/2 red onion, peeled and cut into half rounds
1 avocado, stone removed, peeled and cut into cubes
cheese, cut into cubes or grated (optional)
large handful broccoli sprouts
raw pumpkin seeds
raw sesame seeds
Dressing:
2 Tbsp orange juice
1 Tbsp olive  oil
1/2 tsp raw honey
freshly ground pepper
unrefined sean salt

Method:
Divide all salad ingredients between two plates arranging nicely. Place all dressing ingredients together in a jar with a tight lid, shake until well combined. Drizzle dressing over salad just before serving. Enjoy!
