Ingredients: (use organic where possible)
1 cup good quality coconut cream, refrigerated
2 passion fruit, seeds removed and reserved
2 Tbsp chia seeds
1 tsp honey
1 cup fresh mango, peeled and diced
1 cup fresh papaya, peeled and diced
juice from one orange
small handful goji berries
Mix the first four ingredients together in a medium sized bowl and place in the fridge for around one hour, or until the chia seeds have expanded and formed a coconut gel.
Gently combine the next three ingredients together and then layer this fruit mixture with the coconut cream mixture in tall glasses.
Serve right away, or refrigerate until needed, for no more than a few hours though, as fresh is best!
