Tropical Chia Seed Pudding

Here is my first post from Bali!! I rustled up this tropical chia seed pudding for my lunch today, as I can't get enough of the amazing fruit here, it is so sweet and deliciously refreshing. The chia seeds are soaked in coconut cream, passion fruit and a touch of honey, then layered between chopped fresh mango and papaya smothered in orange juice, and topped with a sprinkling of goji berries. This pudding is a meal in itself!



Serves 2

Ingredients: (use organic where possible)
1 cup good quality coconut cream, refrigerated
2 passion fruit, seeds removed and reserved
2 Tbsp chia seeds
1 tsp honey
1 cup fresh mango, peeled and diced
1 cup fresh papaya, peeled and diced
juice from one orange
small handful goji berries

Method:
Mix the first four ingredients together in a medium sized bowl and place in the fridge for around one hour, or until the chia seeds have expanded and formed a coconut gel.

Gently combine the next three ingredients together and then layer this fruit mixture with the coconut cream mixture in tall glasses.

Serve right away, or refrigerate until needed, for no more than a few hours though, as fresh is best!
